Melee cav should be hunting down other cav and horse archers, all the while horse archers are circling the infantry and completey destroying their formation. In theory, in a realistic battle, you'd still need infantry and archers to hold ground, but this is usually irrelevant in Bannerlord.

Honestly, aside from the few truly outstanding troops like Fian Champs, Khan's Guard etc., most factions have a roster that performs well enough to get the job done and trying to maintain an army of "best of the best" troops from all corners of the world often isn't worth the effort, or even feasible once you have fiefs to defend.
