If you want an easy time, avoid topology, although it is an awesome class. Non-Euclidean geometry was probably the easiest upper level math class I took at UIUC, although I know there are different professors now than when I had them. But Manfroi is awesome! Took his diff eq more than 10 years ago and still use it to this day.PHIL 103 with Livengood is pretty easy as long as you go to office hours (he basically gives all the answers to the homework). There are no actual math calculations you have to do. As the person who teaches STAT 107, I actually think it is a challenging course for student with limited background in mathematics.There's wine/beer tasting, veggie gardening, bowling, flower arrangements, anime/manga, and plenty more. As technical courses, I recommend ASTR 330 or ECE 402 which are pretty easy and interesting. Basically its a first 8 weeks course. You meet once per week for 1 hour for discussion. The rest online. Work load is basically u read 40 pages(ish) per week and take an online quiz and then you have an online midterm and final. Exams are really easy though and you probably spend like 45 minutes per week on class outside of the hour in class.

SHS 222 is really easy. Meets only once per week for half the semester. MUS 132 I took online over the summer 2 years ago. You get a grade for listening to rock music on spotify lol. IHLT 232. No weekly homeworks, or exams. Just two projects that are fairly simple. For all of the jokes people make, CS 373 is not so bad. It's a lot of finite state machine/turing machine kinda stuff, but it's really interesting and can be a lot easier than a class with MPs.
