I'd try to go in May for fewer people, though peak season is July and August. Sone coastal towns start gearing up a bit in May but definitely not crowded. Plus May is sublimely lush and beautiful. If you are just trying to get to Croatia as cheaply as possible though I would be wary of any layover unless you get a very good price across the Atlantic. It does look like that is possible if you focus on London, Paris, or Amsterdam. The architectural grandeur is on a different level, though I did enjoy Vis Town. I am an annual visitor to Hvar. Replete with charm. Take the walk up to the fortress. Lovely coastal walks in either direction of the town. Honestly, both options are well worthy of 2+ day. Whichever decision you make will be a good one.
