I would recommend lowering the Jeep to 2.5-3.5 inches of lift unless you are prepared to do a lot of extra work to make 6 inches of lift comfortable. Fast forward to today (no incidents for the last couple of weeks), and it kicks on while I'm going about 40mph. And then turns off, then on, then off etc. And now the ABS and traction control lights are staying on (before they would flash then turn back off). Run the heater fan full blast. See if there is flow through the heater core. If so, then the water pump is working.

This has happened twice in the past two weeks. The TJ has 90,000 miles on it and it appears that the water pump and hoses (and likely thermostat) were changed recently. Coolant level is full and there are no leaks. Engine bay and radiator are immaculate. Jeep was never an off-roader. When I purchased it it was pretty much stock.
